After the fibrin has been deposited, leucocytes, neutrophils and macrophages are recruited to the wound as part of the defence against infection. The recruitment of macrophages starts at a later stage than that of the other white blood cells. They are only present in bruises that are at least 4 hours old, and this can be used in diagnosing the age of a bruise. The macrophages engulf the spent red blood cells at the bruise, and they break down the haemoglobin to haemosiderin. This takes time, and the absence of haemosiderin within the macrophages at a bruise indicates that the bruise is less than 24 hours old (Gregory, 1996b).

Chapter 3 Solving Livestock Handling Problems in Slaughter Plants Temple Grandin INTRODUCTION Animals should move quietly at a walk through pens and races with a minimum of visible excitement or agitation. Most animals should walk calmly into a stunning pen or a restrainer without the use of an electric goad. If animals balk and refuse to move through a facility, it is important to determine the cause of the problem. Are handling difficulties caused by an equipment problem, or are they due to a lack of employee training and supervision?

5). Each system has its strengths and weaknesses (Warriss, 1994). Once the animals are in a single file race they are usually loaded into a semi-automatic conveyor which takes them to the stunning position. 6 shows the layout for the stunning area for a pig abattoir which has a restraining conveyor. The conveyor grips the pig between two moving walls and conveys it automatically to the stunner, who controls the conveyor with a foot-operated switch. When the pig arrives at the end of the conveyor, the conveyor is stopped and the pig is electrically stunned.
